Sustainability and Impact
By Kristin Koepke, Director of CATL
This past fall I attended an international teaching & research conference. At the opening ceremony and every session thereafter, there was a deliberate message about how aspects of the session or the event aligned with the sustainability goals of the sponsoring organization. I found this approach important to the confernece messaging and I kept remember aspects of their sustainable outreach efforts for months after the conference. So, I mentioned this at a CATL staff meeting. We then talked a bit about ways to be more sustainable as a unit within a larger organzation and agreed that making our catered CATL events to serve vegetarian food. This decision isn’t just about changing what’s on the menu; it’s about creating a positive impact on the environment and contributing to a more sustainable future. Vegetarian diets can reduce carbon footprint, preserve water, promote biodiversity, and inspire healthy and ethical choices. By offering a menu that’s both nutritious and sustainable, we hope to spark conversations, challenge assumptions, and ultimately show that small, intentional choices—like choosing a vegetarian meal—can have a big impact. Join us in this journey toward sustainability, one meal at a time.
